These are so good and look so fancy when they are really very simple. The filling nixes the need for making an additional dish for a veggie. I make these with roasted potatoes (red skinned ones are the Mr.'s favorite) or brown rice. Cous cous would be exceptional as well. The Near East brand is my favorite. They have some that has pine nuts in them, talk about good.
